A simple, warming soup. Ideal for cold winter days.
1kg red onions
about 1/4 ginger root
2 cloves garlic
500ml chicken stock
Slice onions, ginger and garlic. Fry in a little oil for a few minutes until soft. Add chicken stock and cover ingredients with water. Bring to boil; reduce heat, cover and simmer for 30 mins.
Puree in food processor, and serve with bread and cheese.
